This was a great recipe and very easy to make. I did adapt it a bit to what I could find in my local grocery store. I used one large Bok Choi, and for the tofu I used Gardein brand chick'n filets. I also cooked mine on medium-high heat.
Serves 4
Ingredients:
1 Tbs. vegetable oil
1 head broccoli, cut into small flourets
4 garlic cloves, sliced thin
1 red chilli, seeded and finely sliced
1 bunch spring onions, sliced
5 ounce soya beans
2 heads pak choi, quartered
2 x 150g packs marinated tofu pieces
1 1/2 Tbs. hoisin sauce
1 Tbs. reduced-salt soy sauce (add extra to suit your own taste)
1oz roasted cashews
Directions:
1. Heat the oil in a non-stick wok. Add the broccoli, then fry on a high heat for 5 minutes or until just tender, adding a little water if it begins to catch.
2. Add the garlic and chilli, fry for 1 minute, then toss through the spring onions, soya beans, pak choi and tofu. Stir-fry for 2-3 minutes. Add the hoisin, soy and nuts to warm through.
